Escoveitch Sauce
Ingredients:
• ½ cup Pure white distilled vinegar
• ½ cup water
• 2 small carrots julienned (cut into strips)
• 1 small cho-cho, julienned
• 1 tbsp crushed pepper
• 6 pimento seeds
• 6 small onions, sliced
• 3 stalks scallion
• ½ tsp salt
• 1 tbsp sugar

Directions:
Place all ingredients in a saucepan
Bring to a boil and simmer for 10 minutes
Pour hot liquid over fried fish using vegetables as a garnish.
